It is entertaining to see what inspires what in the world of cooking. I have found Pinterest a great bit of fun in exploring recipes, exploring blogs and just seeing the amazing number of food photographers out there. It is pure inspiration, I was disappointed to find out that some bloggers had had their entire recipes and photos taken without credit given to their blog (most of the fun for me is discovering the food blog that created the delicious photo I find). I am fine with people pinning my recipes and photos as long as they link back to my website, if you are a blogger that doesn’t want people to pin from your site visit Mark’s blog for the technique on how you can add code to your site that will stop pinning. Personally I have found tons of new food blogs to follow and explore on Pinterest! It is food eye candy!

We received flavored mayonnaise that our friend had sent from Holland. I saw the mayonnaise and wanted to cook something that would go with mayonnaise, garlic flavored and pepper (the easy answer is a sandwich of some sort right?). I decided that we should make sandwiches, but determined that I actually wanted to use the mayonnaise to create a dipping sauce for some sweet potato fries.

One of my husband’s favorite sandwiches is a cajun chicken sandwich from a local restaurant. I searched around for some cajun seasoning ideas (I guess you can buy the premixed stuff, but I didn’t have the in the house, I may buy some and try it out). I needed a cajun seasoning that was fairly mild (I like a little zest, but I am not a huge fan of eating food that is so spicy that it makes me cry). I discovered the Allrecipes.com cajun spice mix and adapted it to suit my preferences.

While I thawed chicken breasts for the sandwich I mixed the cajun spice:

  • 1 teaspoon salt
  • 2 teaspoons garlic powder
  • 2 1/2 teaspoons paprika
  • 1 teaspoon ground black pepper
  • 1 teaspoon onion powder
  • 1 teaspoon cayenne pepper
  • 1 teaspoons dried oregano
  • 1  teaspoons dried thyme
  • 1/2 teaspoon red pepper flakes

Additional cajun chicken sandwich ingredients:

  • 2-6 recipe ready chicken breasts
  • Provolone cheese (or your favorite cheese)
  • Red leaf lettuce
  • Mayonnaise

I coated the the chicken breasts in the cajun sandwich spice and left the remainder in an air tight tupperware container.

I placed the chicken breasts in a ziplock bag coated in the cajun seasoning for 30 minutes in the fridge (I mostly had it marinate because I was prepping other items for dinner).

I set my husband to work at the grill with the marinated chicken breasts. It took about 10 minutes to cook them thoroughly, they were “recipe ready” chicken breasts so they were already trimmed and pounded thin.

I mixed some leftover spice with regular mayonnaise and garlic mayonnaise to make a dipping sauce for sweet potato fries. Yum!.
