This year I asked for the recipe and the instruction on how to make them myself. They came out pretty delicious although the cuts were a bit askew.<\/p>\n<p>The recipe does not include a set amount of flour because it is the consistency that you want to create and different flours can set a different consistency.<\/p>\n<p>Ingredients\u00a0 for homemade egg noodles:<\/p>\n<ul>\n<li>2 Eggs<\/li>\n<li>1\/2 teaspoon salt<\/li>\n<li>1\/2 cup evaporated milk<\/li>\n<li>All purpose flour<\/li>\n<\/ul>\n<p>Mix egg, salt and milk in a bowl. Gradually add sifted flour slowly stirring with flour till ball forms and dough is not sticky. This invollved adding a lot of flour over time (more than I originally expected, but this is enough noodles to make a good sized pot of soup).<\/p>\n<p style=\"text-align: center;\"><a href=\"http:\/\/www.cookingonadime.com\/wp-content\/uploads\/2010\/10\/dough-for-homemade-egg-noodles.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-260\" style=\"margin: 5px;\" title=\"dough-for-homemade-egg-noodles\" src=\"http:\/\/www.cookingonadime.com\/wp-content\/uploads\/2010\/10\/dough-for-homemade-egg-noodles.jpg\" alt=\"\" width=\"400\" height=\"446\" srcset=\"http:\/\/www.cookingonadime.com\/wp-content\/uploads\/2010\/10\/dough-for-homemade-egg-noodles.jpg 400w, http:\/\/www.cookingonadime.com\/wp-content\/uploads\/2010\/10\/dough-for-homemade-egg-noodles-269x300.jpg 269w\" sizes=\"auto, (max-width: 400px) 100vw, 400px\" \/><\/a><\/p>\n<p>Put on well floured board or counters that you can cut on, roll out as thin as possible. Every now and then add flour under each side as you roll out the egg noodle dough. I ended up cutting the dough in half and rolling out each half rather than trying to roll it all at once.<\/p>\n<p style=\"text-align: center;\"><a href=\"http:\/\/www.cookingonadime.com\/wp-content\/uploads\/2010\/10\/rolling-dough-for-egg-noodles.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-261\" style=\"margin: 5px;\" title=\"rolling-dough-for-egg-noodles\" src=\"http:\/\/www.cookingonadime.com\/wp-content\/uploads\/2010\/10\/rolling-dough-for-egg-noodles.jpg\" alt=\"\" width=\"400\" height=\"471\" srcset=\"http:\/\/www.cookingonadime.com\/wp-content\/uploads\/2010\/10\/rolling-dough-for-egg-noodles.jpg 400w, http:\/\/www.cookingonadime.com\/wp-content\/uploads\/2010\/10\/rolling-dough-for-egg-noodles-254x300.jpg 254w\" sizes=\"auto, (max-width: 400px) 100vw, 400px\" \/><\/a><\/p>\n<p>Once the dough is as flat as you can get it, fold it into thirds and cut it into thin slices. Leave on counter or place on a plate until you are ready to add them to your soup. You can let them dry out for a few hours or use them immediately and they will be fine. I stacked them on plates and set them next to the stove until after I had prepared the soup (I added them as the last ingredient).
