My friend was talking about cooking an acorn squash with dinner the other day which convinced me that I would need to go ahead and attempt this feat. I bought an acorn squash at the grocery store and looked up recipes online. It really looked like the tried and true recipe uses brown sugar and syrup.

Ingredients for baking acorn squash:

  • 2 Tbsp butter (one Tbsp for each side)
  • 2 Tbsp brown sugar (1 Tbsp for each side)
  • 2 teaspoons maple syrup
  • Salt and pepper to taste

Preheat oven to 400 degrees. With a very sharp knife cut the acorn squash in half and scoop out the seeds and rind with a spoon leaving two clean halves.

Score the insides of the acorn squash and add 1 Tbsp butter, 1 Tbsp brown sugar, and one teaspoon of maple syrup to each side. Place in a pan with about 1/4 inch of water in the bottom to keep it from drying out while you bake it.

Bake the acorn squash for about one hour and maybe a little bit more to make sure it is cooked thoroughly, but not too much. It should be tender to the rind.

Serve with salt and pepper to taste..
