I had made huevos rancheros recently and had a lot of leftover ingredients. I decided that I would make some stacked tacos with the corn tortillas and my favorite taco seasoning and other fresh ingredients that I had around the house.

Corn Tortilla Taco Stacks recipe ingredients:

One pound hamburger
1 small tomato
1 small yellow onion
1 pinch cilantro
1 can medium olives
Lettuce
Shredded cheese
Sour cream
Corn tortillas

All Recipes Taco seasoning (I did not make up this recipe, but it truly makes great tacos, and of course in order to make it I had to go buy a ton of new spices). Mix the seasoning in a small bowl and set to the side.

Ingredients

1 tablespoon chili powder
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon crushed red pepper flakes
1/4 teaspoon dried oregano
1/2 teaspoon paprika
1 1/2 teaspoons ground cumin
1 teaspoon sea salt
1 teaspoon black pepper

In a medium saucepan add the ground hamburger and some chopped onions and cook over medium heat. Once the meat has started to brown add the bowl of prepared taco seasoning. Keep cooking until the meat is properly browned and thoroughly cooked.

While the taco meat is browning chop the tomato, the rest of the onion and the cilantro and add some sea salt and pepper to taste. Mix this in a bowl and set aside as you will use it to garnish the taco stacks.

Slice the olives into thin slices and set aside for a garnish. Chop lettuce and set aside.

In a small pan heat up about a tablespoon of vegetable oil over medium heat. Add a corn tortilla and cook both sides until slightly browned on both sides. Don’t overcook, just trying to heat up the corn tortillas nicely.

On a plate place a corn tortilla and cover with taco meat and add some shredded cheese and the tomato/onion mix. Stack on another corn tortilla. Add shredded cheese, lettuce, olives, and sour cream (in the image I set the tomatoes mix and sour cream to the side).

Serve and enjoy!.
