I wanted to go ahead and try out making some crockpot beef soup and grabbed some fresh vegetables from the grocery store. I like to cook soup in the crockpot when I know I am going to be busy in the evening, although if we are home the yummy smells of the crockpot soup make us hungry all day.
This soup has a very hearty broth to it, I don’t really like watery broths in my beef soup. You can cut back on the amount of beef base that you add if you want a milder broth (maybe a teensy bit less salty too).
- 1 8 oz jar beef base
- 48 oz water
- 1 lb beef stew meat
- 1 1/2 cups baby carrots cut lengthwise in half
- 2 stalks celery chopped
- 1 small onion chopped
- 4 medium red potatoes cut into 1 inch cubes with skin on
- 1 can tomato soup
- 2 bay leaves
- 1 teaspoon fresh ground pepper
- 2 cloves fresh pressed garlic
I mixed the water and beef base in the crockpot and added the beef stew meat. After that I added the vegetables, tomato soup and spices. Cover the crockpot and cook on low for 8 hours.
I did add some water here and there while it was simmering (so I actually didn’t add it all in the beginning). You may want to add more or less water according to taste. We definitely loved the soup and I froze the leftover soup for a dinner on another night (should feed 4-6, but we are only 2). 🙂.
