I split this cheesy bakes macaroni recipe between two casserole dishes and freeze one for later (it is a great double meal for a household of two), but will easily feed 4-8 people in one setting.

Ingredients for cheesy baked macaroni:

  • 1/2 pound spicy Italian sausage
  • 1/2 cup chopped fresh red bell pepper
  • 1/2 cup chopped fresh green bell pepper
  • 1 small onion
  • 1 15 oz. container ricotta cheese
  • 2 cups shredded six cheese Italian cheese mix
  • 2 jars Ragu six cheese sauce
  • 3 cups uncooked elbow macaroni

Preheat oven to 350 degrees.

Cook sausage in  medium saucepan until it starts to brown, add chopped red bell pepper, green bell pepper and chopped onion. Once the sausage and veggies are cooked, pour in one bottle of tomato sauce and let simmer over medium-low heat.

Bring water to a boil in a large pot and add 3 cups uncooked macaroni. Cook until al dente. Strain the noodles and add back to the large pot. Stir in the ricotta, last bottle of spaghetti sauce, and 2 cups of cheese. Add the sausage and veggies with sauce. Heat up over medium low heat until ricotta is melted. Add to one large lasagne pan or split between two smaller ones.

Sprinkle with some remaining cheese and bake for about 60 minutes at 350 degrees, until bubbling the whole way through. Allow to sit for 10 minutes and them serve.
